Interfacial host-guest complexation of copolymers stabilizing liquid dispersions

Abstract: The proposed experiment aims at revealing the structural organization of the adsorbed layers of a couple of complementary polymers that form host-guest complexes at the interface of ultra-stable oil-in-water emulsions. The measurements will be performed under variation of the polymer chain length and the number of the host/guest functions per macromolecule. We will use three different contrast-matching conditions to reveal the contribution of each component. We will also vary the fraction of the dispersed oil-phase at a fixed concentration of stabilizers to follow the changes in the interfacial layer within the emulsion matrix.
